Perbersit:

500 gr miell
1 lugë gjelle kripë
300 ml ujë të vakët
1 lugë gjelle uthull molle
3-4 lugë gjelle gjalpë të zbutur
1 lugë gjelle tharm buke
1 lugë reçeli sheqer.

Pergatitja:

Tharmi fermentohet me ujë të ngrohtë bashkë me sheqerin dhe pak miell.
Në një enë hedhim miellin e situr, shtojmë kripën, tharmin e fermentuar, ujin, uthullën dhe gjalpën.
Brumin e ngjeshim mirë derisa të formojmë një topth të butë.
E lëmë të pushojë në vend të ngrohtë për të paktën 45 min.
Pastaj e ndajmë në kuleç, të cilët i rendisim në tavën ku do të piqen derisa furra të jetë ngrohur në 250 gradë.
Para futjes në furrë i lagim pak me ujë dhe sipër i spërkasim me miellin.
Piqen për 12-15 minuta. Pas kësaj mbështillen me pecetë kuzhine, për të ruajtur butësinë.
